If you would like a meal prepared for your arrival or during your stay, please
use the following menu as your guide. You should
limit your selection to no more than 2 entrees for
dinners and 1 entree for lunch (not
including the side dishes). This allows Rosa
time to get all her cleaning
done too. Don't forget to tip Rosa if you
find her cooking adds to the enjoyment of your stay!

Fish
tacos: Flounder seasoned with garlic, and then breaded and fried.
These are served with cilantro seasoned white sauce, salsa and
tortillas. One of our favorites! Even our kids love this fish!!!

Shrimp Tacos
Rosa prepares shrimp in her secret sauce and
serves them taco-style with all the fixings…(favorite dish)

Shrimp Cocktail, Mexican style: Shrimp is chopped up and served in
a tomato base with chopped onions, tomatoes, cucumbers, and celery. Just delicious!!!

Shrimp Barbocoa: No, this isn't cooked on the grill like it sounds,
it is sautéed in a delicious red sauce and is great over rice. You will be surprised when you find out what she uses to make the
sauce! I'm not going to give away the secret, but it's really tasty!

Shrimp salad served on a tostada shell. (Don't be looking for salad
greens here... its' made with mayo.
Mexican Food
1.
Chicken Enchiladas: good for a crowd and easy to heat up! Not spicy
either.
2. Chili
Relleno: These are green chili peppers which are roasted, then stuffed
with Monterey Jack cheese, and then dipped in an egg batter and fried. She
can also add shrimp to these if you like. The chilies are usually mild on
the spicy meter.

Beef with red chili sauce: good with rice or tortillas
4. Chicken
or beef tacos: These are traditionally eaten in a corn tortilla, so specify
if you prefer four.

Enchiladas: Chicken, beef or cheese
6. Tacos
or Tostadas: Bean or chicken or beef.
7. Sopes:
These are yummy. She makes a thick corn meal patty, and then fill it with a
little mashed potato, shredded beef, and then tops it with lettuce, tomato,
avocado and a salsa.

Machaca: this is dried beef cooked with potatoes, tomatoes, onions,
tomatoes and chilies, and served on a tortilla. This is really delicious and
makes great breakfast leftovers with eggs! This can be made with tomatoes
and onions and chilis and potatoes..

Quesadillas: just like a grilled cheese sandwich, but made with
tortillas. Always a favorite with my little girls!
10. Fajitas

Rosa usually buys flounder (fish), but if you have another
preference, please let her know. (When describing quantities she speaks in
terms of “litros” which is equivalent to about 2 lbs.)
